  • 12 ounces lo mein noodles
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 3 green onions, sliced
  • 2 tablespoons chopped cilantro

For the Szechuan Dressing

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon chili oil
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon toasted Szechuan peppercorns, finely ground
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger

Instructions
 

  • Cook the lo mein noodles according to package instructions until tender.
  • Drain the noodles and rinse thoroughly under cold water.
  • Allow the noodles to cool completely and set aside.
  • Toast the Szechuan peppercorns in a dry skillet for 1–2 minutes until fragrant.
  • Grind the toasted peppercorns into a fine powder.
  • Whisk together soy sauce, rice vinegar, sesame oil, chili oil, honey, garlic, ginger, and ground peppercorns.
  • Place noodles in a large mixing bowl.
  • Add carrots, bell pepper, cucumber, green onions, and cilantro.
  • Pour the dressing over the noodles and toss until evenly coated.
  • Refrigerate for 15 minutes before serving.
  • Garnish with sesame seeds, peanuts, and additional herbs.
  • Serve chilled and enjoy.
