For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp cumin
For the Chimichurri Sauce:
- 1 cup fresh parsley, chopped
- ½ cup fresh cilantro, chopped (optional)
- 3 cloves garlic, minced
- ½ tsp red pepper flakes
- 2 tbsp red wine vinegar
- ¼ cup olive oil
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp fresh lemon juice
Prepare the Chimichurri Sauce:In a bowl, mix parsley, cilantro, garlic, red pepper flakes, red wine vinegar, olive oil, salt, pepper, and lemon juice.Stir well and set aside. Marinate the Chicken:Rub chicken breasts with olive oil, salt, pepper, paprika, and cumin.Let it marinate for 15 minutes. Cook the Chicken:Grilling: Preheat the grill to medium-high heat and cook chicken for 6-7 minutes per side until fully cooked.Baking: Preheat the oven to 375°F (190°C) and bake for 20 minutes or until the internal temperature reaches 165°F (75°C). Rest and Serve:Let the chicken rest for 5 minutes.Drizzle chimichurri sauce over the chicken before serving.Serve with rice, salad, or grilled vegetables.
