Chimichurri Chicken is a delicious, herb-infused dish featuring grilled or baked chicken smothered in a vibrant, garlicky chimichurri sauce. Perfect for a fresh and healthy meal.

Ingredients
  

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp cumin

For the Chimichurri Sauce:

  • 1 cup fresh parsley, chopped
  • ½ cup fresh cilantro, chopped (optional)
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • 2 tbsp red wine vinegar
  • ¼ cup olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions
 

  • Prepare the Chimichurri Sauce:
    In a bowl, mix parsley, cilantro, garlic, red pepper flakes, red wine vinegar, olive oil, salt, pepper, and lemon juice.
    Stir well and set aside.
  • Marinate the Chicken:
    Rub chicken breasts with olive oil, salt, pepper, paprika, and cumin.
    Let it marinate for 15 minutes.
  • Cook the Chicken:
    Grilling: Preheat the grill to medium-high heat and cook chicken for 6-7 minutes per side until fully cooked.
    Baking: Preheat the oven to 375°F (190°C) and bake for 20 minutes or until the internal temperature reaches 165°F (75°C).
  • Rest and Serve:
    Let the chicken rest for 5 minutes.
    Drizzle chimichurri sauce over the chicken before serving.
    Serve with rice, salad, or grilled vegetables.

Notes

  • You can adjust the spice level by adding more or less red pepper flakes.
  • Chimichurri sauce can be made in advance and stored in the refrigerator for up to 5 days.
