Ingredients
  

  • 8 egg roll wrappers
  • 1 cup cooked and shredded chicken (or your choice of protein)
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup bean sprouts
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • Oil for frying
  • Water for sealing the wrappers

Instructions
 

  • In a small bowl, mix the soy sauce, oyster sauce, sesame oil, and cornstarch to create the sauce. Set aside.
  • In a large skillet or wok, heat a bit of oil over medium-high heat. Add the minced garlic and sliced green onions. Sauté for about 30 seconds until fragrant.
  • Add the shredded cabbage and carrots to the skillet. Stir-fry for 2-3 minutes until the vegetables start to soften.
  • Add the cooked and shredded chicken (or your choice of protein) to the skillet. Stir in the bean sprouts. Pour the sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes. Remove from heat and let the filling cool slightly.
  • Lay out an egg roll wrapper with one corner pointing towards you, forming a diamond shape. Place a spoonful of the filling in the center of the wrapper.
  • Fold the bottom corner over the filling, tucking it in snugly. Fold in the sides to enclose the filling, then roll it up tightly towards the remaining corner. Dab the top corner with a bit of water and press to seal the egg roll.
  • Heat oil in a deep pan or skillet for frying. Carefully place the egg rolls into the hot oil, seam side down. Fry until they are golden brown and crispy, turning occasionally to ensure even cooking. This usually takes about 3-4 minutes.
  • Once the egg rolls are cooked, use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain any excess oil.
  • Serve the Chinese egg rolls hot with your favorite dipping sauce, such as sweet and sour sauce or soy sauce with a touch of sesame oil.
