- 2 cup cooked pasta (penne or rotini)
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup red bell pepper (diced)
- 1/4 cup corn kernels
- 1/4 cup black beans (rinsed and drained)
- 1/4 cup red onion (finely chopped)
- 1/4 cup cilantro (chopped)
- 1/2 cup Greek yogurt or mayonnaise
- 2 tbsp chipotle peppers in adobo sauce (finely chopped)
- 1 tbsp lime juice
- 1 tsp honey
- 1 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional)
Cook pasta according to package instructions. Drain and let cool.
In a large mixing bowl, combine cherry tomatoes, bell pepper, corn, black beans, red onion, and cilantro.
In a separate bowl, whisk together Greek yogurt (or mayo), chipotle peppers, lime juice, honey, garlic powder, cumin, salt, and pepper until smooth.
Add the cooled pasta to the vegetable mixture and pour the dressing over it.
Toss well to combine all ingredients evenly.
Top with shredded cheese if desired and refrigerate for 15 minutes before serving.
Serve chilled and enjoy!
