Ingredients
  

  • 2 cup cooked pasta (penne or rotini)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup red bell pepper (diced)
  • 1/4 cup corn kernels
  • 1/4 cup black beans (rinsed and drained)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup Greek yogurt or mayonnaise
  • 2 tbsp chipotle peppers in adobo sauce (finely chopped)
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)

Instructions
 

  • Cook pasta according to package instructions. Drain and let cool.
  • In a large mixing bowl, combine cherry tomatoes, bell pepper, corn, black beans, red onion, and cilantro.
  • In a separate bowl, whisk together Greek yogurt (or mayo), chipotle peppers, lime juice, honey, garlic powder, cumin, salt, and pepper until smooth.
  • Add the cooled pasta to the vegetable mixture and pour the dressing over it.
  • Toss well to combine all ingredients evenly.
  • Top with shredded cheese if desired and refrigerate for 15 minutes before serving.
  • Serve chilled and enjoy!

Notes

  • Adjust chipotle quantity based on spice preference.
  • For a dairy-free version, use vegan mayo or avocado dressing.
