For the Cake
- 200 g all-purpose flour
- 50 g unsweetened cocoa powder
- 120 ml strongly brewed black tea, cooled
- 120 ml whole milk
- 120 ml neutral vegetable oil
- 100 g dark chocolate, melted
- 1 teaspoon vanilla extract
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
For the Chocolate Glaze
- 100 g dark chocolate
- 80 ml heavy cream
- 1 teaspoon unsalted butter
Brew the Tea
Prepare approximately 150 ml of strong black tea.Allow it to steep slightly longer than you normally would for drinking, then remove the tea leaves or tea bag.Measure 120 ml and allow it to cool.Assam, English Breakfast, Earl Grey, or Darjeeling can work particularly well.
Prepare the Oven
Preheat the oven to 175°C (350°F).Grease a 22–23 cm round cake pan and line the bottom with parchment paper.
Combine the Wet Ingredients
In another large bowl, whisk together the sugar, eggs, vegetable oil, milk, vanilla, and cooled black tea.Mix until smooth.
Add the Chocolate
Stir the melted dark chocolate into the wet mixture.Make sure the chocolate is warm rather than hot.
Bake
Pour the batter into the prepared cake pan.Smooth the surface.Bake for approximately 40–50 minutes, or until a skewer inserted into the center comes out clean or with a few moist crumbs.
Glaze the Cake
Place the cooled cake on a wire rack.Pour the chocolate glaze over the top and gently spread it toward the edges.Allow some glaze to drip naturally down the sides.
