Ingredients
  

  • 1 cup almond butter or peanut butter
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3/4 cup chocolate chips

Instructions
 

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Wet Ingredients:
    In a medium bowl, mix the almond butter (or peanut butter), brown sugar, egg, and vanilla extract until smooth.
  • Add Dry Ingredients:
    Stir in the baking soda and salt, then fold in the chocolate chips.
  • Form Dough Balls:
    Scoop tablespoon-sized amounts of dough and place them on the prepared baking sheet about 2 inches apart.
  • Bake:
    Bake for 10-12 minutes, or until the edges are set and slightly golden.
  • Cool:
    Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • These cookies do not spread much, so flatten them slightly before baking if you prefer a thinner cookie.
  • Store in an airtight container for up to 5 days.
  • Use sunflower seed butter for a nut-free alternative.
