Ingredients
  

For the Chocolate Cookie Crust

  • 24 chocolate sandwich cookies, crushed
  • 6 tbsp unsalted butter, melted

For the Cheesecake Filling

  • 24 oz (680 g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 8 oz semi-sweet chocolate, melted and cooled
  • 2 tbsp cocoa powder

For the Topping

  • Whipped cream
  • Chocolate curls
  • Crushed chocolate cookies
  • Chocolate drizzle (optional)

Instructions
 

  • Preheat the oven to 325°F (165°C). Mix crushed chocolate cookies with melted butter until combined.
  • Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.
  • Beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing after each addition.
  • Mix in vanilla extract, sour cream, melted chocolate, and cocoa powder until fully incorporated.
  • Pour the cheesecake mixture over the prepared crust and smooth the top.
  • Bake for 50–55 minutes or until the center is slightly set but still slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door slightly open for 30 minutes.
  • Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  • Top with whipped cream, chocolate curls, crushed cookies, and chocolate drizzle.
  • Slice and serve chilled.
