  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water
  • ¾ cup rainbow sprinkles

For the Chocolate Buttercream Frosting

  • 1 cup unsalted butter, softened
  • 3½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 3 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C).Grease and line two 8-inch round cake pans with parchment paper.
  • Slowly stir in hot coffee or hot water.Mix until smooth.Fold in rainbow sprinkles gently.
  • Divide batter evenly between the prepared pans.Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.Cool completely.
  • Beat butter until creamy.Gradually add powdered sugar and cocoa powder.Add cream, vanilla extract, and salt.Beat until smooth and fluffy.
  • Place one cake layer on a serving plate.Spread frosting evenly over the top.Add the second cake layer.Frost the top and sides of the cake.
  • Cover with rainbow sprinkles, chocolate curls, or mini chocolate chips.Serve and enjoy.
