For the Cookies:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
For the Filling:
- 1 pint vanilla ice cream (or flavor of choice)
- Candy eyes, sprinkles, or colored icing for decoration
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, whisk flour, cocoa powder, baking soda, and salt.
In another bowl, beat butter and sugar until fluffy. Add egg and vanilla, mixing well.
Combine dry ingredients with wet mixture to form dough.
Roll dough into balls, flatten slightly, and place on baking sheets.
Bake for 8–10 minutes until set. Cool completely.
Slightly soften ice cream. Spread a scoop between two cookies to form sandwiches.
Roll edges in sprinkles or decorate with candy eyes and icing for spooky designs.
Freeze for at least 1 hour before serving.
