Ingredients
  

For the Brownie Layer

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder

For the Mint Frosting

  • ½ cup unsalted butter, softened
  • 2½ cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon peppermint extract
  • 2–3 drops green food coloring (optional)

For the Chocolate Ganache

  • 1½ cups semi-sweet chocolate chips
  • ½ cup heavy cream
  • 1 tablespoon butter

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  • Whisk together the melted butter and sugar until smooth.
  • Add eggs one at a time, then mix in the vanilla extract.
  • Sift together cocoa powder, flour, baking powder, and salt. Fold the dry ingredients into the wet mixture until just combined.
  • Spread the batter evenly into the prepared pan.
  • Bake for 28–30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  • Allow the brownies to cool completely.
  • Beat the butter until creamy. Gradually add powdered sugar, heavy cream, peppermint extract, and food coloring (if using). Spread the frosting evenly over the cooled brownies.
  • Heat the heavy cream until just simmering. Pour it over the chocolate chips and let stand for 2 minutes. Stir until smooth, then mix in the butter.
  • Pour the ganache over the mint frosting and spread evenly. Refrigerate for at least 1 hour before slicing into squares.
