  • ½ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

Wet Ingredients

  • 2 cups grated zucchini (excess moisture gently squeezed)
  • 2 large eggs
  • ¾ cup vegetable oil
  • 1½ cups granulated sugar
  • 2 teaspoons vanilla extract
  • ½ cup buttermilk

Vanilla Swirl

  • ¾ cup reserved batter
  • 2 tablespoons flour
  • 1 teaspoon vanilla extract

Optional Chocolate Frosting

  • 1½ cups powdered sugar
  • ¼ cup cocoa powder
  • 3 tablespoons butter (softened)
  • 2–3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line a 9×13-inch sheet pan.
  • Whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • Beat eggs, sugar, vegetable oil, vanilla, and buttermilk until smooth.
  • Fold grated zucchini into the wet ingredients.
  • Gradually combine the dry ingredients with the wet mixture until just incorporated.
  • Reserve about ¾ cup of batter. Stir in flour and vanilla to create the lighter swirl mixture.
  • Spread the chocolate batter evenly into the prepared pan.
  • Drop spoonfuls of the vanilla batter over the chocolate batter.
  • Use a butter knife to gently swirl the batters together, creating a marbled pattern.
  • Bake for 32–38 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Cool completely before frosting or serving.
