  • ½ cup buttermilk

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder.
  • In a separate large bowl, whisk the eggs, granulated sugar, brown sugar, vegetable oil, vanilla extract, and buttermilk until smooth.
  • Fold the grated zucchini into the wet ingredients.
  • Gradually add the dry ingredients, mixing gently until just combined.
  • Fold in the chocolate chips and nuts, if using.
  • Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  • Bake for 18–22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Cool the cupcakes completely before decorating with your favorite frosting.
