Ingredients
  

For the Steak

  • 1½ pounds flank steak or sirloin steak
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder

For the Chimichurri

  • 1 cup fresh parsley, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons fresh oregano (or 2 teaspoons dried)
  • ½ teaspoon red pepper flakes
  • ⅓ cup olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

For the Salad

  • 5 cups chopped romaine lettuce
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • 2 tablespoons roasted pumpkin seeds

Instructions
 

  • Mix all chimichurri ingredients in a bowl and let the flavors meld for at least 15 minutes.
  • Season steak with olive oil, paprika, garlic powder, salt, and pepper.
  • Grill steak over medium-high heat for 4–5 minutes per side, depending on thickness.
  • Allow steak to rest for 10 minutes before slicing thinly against the grain.
  • Combine lettuce, spinach, tomatoes, cucumber, bell pepper, onion, avocado, feta, and pumpkin seeds in a large serving bowl.
  • Top with sliced steak.
  • Serve immediately with extra chimichurri on the side.
