For the Skewers
- 1 pound boneless chicken thighs or breasts, cubed
- 8 ounces chorizo sausage, sliced into thick rounds
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into chunks
- Wooden or metal skewers
For the Marinade
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- ½ teaspoon chili flakes
- Juice of 1 lemon
- Salt and black pepper to taste
Garnish
- Fresh chopped parsley
- Lemon wedges
- Extra smoked paprika sprinkle
In a large bowl, whisk together olive oil, garlic, smoked paprika, oregano, chili flakes, lemon juice, salt, and black pepper.
Add chicken pieces to the marinade and toss well. Refrigerate for at least 30 minutes.
Thread chicken, chorizo slices, bell peppers, and onion pieces onto skewers, alternating ingredients evenly.
Heat grill to medium-high temperature and lightly oil the grates.
Cook skewers for 12–15 minutes, turning occasionally until chicken is cooked through and lightly charred.
Remove skewers from the grill and let rest for a few minutes. Garnish with fresh parsley, lemon wedges, and a sprinkle of smoked paprika.
