Ingredients
  

For the Chicken

  • 750 g boneless chicken thighs or chicken breast
  • ¾ cup fresh cilantro leaves
  • ¼ cup fresh mint leaves
  • 2–3 green chilies
  • 1 tablespoon ginger, chopped
  • 5 garlic cloves
  • 2 tablespoons lemon juice
  • ½ cup thick plain yogurt
  • 1 tablespoon oil
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon Kashmiri chili powder
  • 1 teaspoon salt, or to taste

For Garnishing

  • Fresh cilantro leaves
  • Lemon wedges
  • Thinly sliced red onion
  • Fresh mint leaves
  • Extra green chutney, optional

Instructions
 

Make the Cilantro Chutney

  • Add cilantro, mint, green chilies, ginger, garlic, and lemon juice to a blender.
    Blend until you have a smooth, vibrant green paste. Add a tablespoon or two of water only if necessary.

Prepare the Marinade

  • Transfer the chutney to a large bowl. Add yogurt, oil, cumin, coriander, garam masala, turmeric, Kashmiri chili powder, black pepper, and salt.
    Mix thoroughly until smooth.

Prepare the Chicken

  • Pat the chicken dry with paper towels. If using large chicken breasts or thick pieces, make a few shallow cuts across the surface. This allows the marinade to penetrate more effectively.

Marinate

  • Add the chicken to the green marinade and coat each piece thoroughly.
    Cover and refrigerate for at least 1 hour. For deeper flavor, marinate for 3–4 hours.
    Avoid leaving the chicken in a highly acidic marinade for excessively long periods because the texture can become less pleasant.

Grill or Pan-Cook

  • Preheat a grill pan or heavy skillet over medium-high heat.
    Add a small amount of oil and place the marinated chicken in the pan. Cook without moving it too much until the first side develops a lightly browned exterior.
    Turn and continue cooking until the chicken is completely cooked through

Finish with Lemon

  • Remove the chicken from the heat and let it rest for about 5 minutes.
    Squeeze fresh lemon juice over the top and garnish generously with cilantro and mint.

Serve

  • Slice the chicken and serve hot with basmati rice, naan, roti, salad, or mint-coriander chutney.

Notes

  • Use fresh cilantro for the brightest flavor and color.
  • Thick yogurt creates a better coating than watery yogurt.
  • Chicken thighs are particularly juicy and forgiving.
  • Do not add too much water when blending the chutney.
  • Make sure the chicken is evenly coated with the marinade.
  • Avoid overcrowding the cooking surface.
  • Let the chicken rest briefly before slicing.
  • Always verify that chicken reaches 165°F (74°C) internally.
