- 2 medium acorn squash
- 4 tablespoons butter
- 4 tablespoons brown sugar or maple syrup
- ½ teaspoon cinnamon (optional)
- Salt and pepper to taste
Preheat Oven: Preheat oven to 400°F (200°C).
Prepare Squash: Cut each acorn squash in half from stem to tip. Scoop out seeds and stringy pulp.
Arrange in Pan: Place halves cut side up in a baking dish. Add a little water to the bottom of the pan to prevent drying.
Add Flavor: Place 1 tablespoon butter and 1 tablespoon brown sugar (or maple syrup) in each half. Sprinkle with salt, pepper, and cinnamon if desired.
Bake: Roast for 45–55 minutes, until the flesh is tender and easily pierced with a fork.
Serve: Serve warm, scooping the buttery sweet sauce over the flesh before enjoying.
