Baked Acorn Squash is a comforting, naturally sweet side dish that celebrates fall’s bounty. Roasted to perfection with butter, brown sugar, and spices, it’s tender, flavorful, and easy to prepare — perfect for holidays or cozy family dinners.

Ingredients
  

  • 2 medium acorn squash
  • 4 tablespoons butter
  • 4 tablespoons brown sugar or maple syrup
  • ½ teaspoon cinnamon (optional)
  • Salt and pepper to taste

Instructions
 

  • Preheat Oven: Preheat oven to 400°F (200°C).
  • Prepare Squash: Cut each acorn squash in half from stem to tip. Scoop out seeds and stringy pulp.
  • Arrange in Pan: Place halves cut side up in a baking dish. Add a little water to the bottom of the pan to prevent drying.
  • Add Flavor: Place 1 tablespoon butter and 1 tablespoon brown sugar (or maple syrup) in each half. Sprinkle with salt, pepper, and cinnamon if desired.
  • Bake: Roast for 45–55 minutes, until the flesh is tender and easily pierced with a fork.
  • Serve: Serve warm, scooping the buttery sweet sauce over the flesh before enjoying.

Notes

  • hoose firm, heavy squash with dull, dark green skin for best flavour.
  • Adding maple syrup gives a richer, more traditional sweetness.
  • To make it savoury, replace sugar with olive oil, garlic, and herbs.
  • Save and roast the seeds for a crunchy snack.
  • This dish pairs beautifully with roasted meats or grilled vegetables.
