For the Dough
- 3 cups all-purpose flour
- 1 teaspoon salt
- ½ cup cold unsalted butter, cubed
- 1 egg
- ½ cup cold water
For the Beef Filling
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- ½ teaspoon oregano
- ½ teaspoon black pepper
- 1 teaspoon salt
- ¼ cup green olives, chopped
- 2 hard-boiled eggs, chopped
For Assembly
- 1 egg, beaten for egg wash
Combine flour and salt in a large bowl. Cut in the butter until crumbly. Add the egg and cold water. Mix until a dough forms. Wrap and refrigerate for 30 minutes.
Heat olive oil in a skillet. Sauté onion until soft. Add garlic and cook for one minute.
Add ground beef and cook until browned. Stir in paprika, cumin, oregano, salt, and pepper.
Remove from heat and allow the mixture to cool slightly. Stir in chopped olives and hard-boiled eggs.
Roll out the chilled dough on a lightly floured surface. Cut into 5-inch circles.
Place a spoonful of beef filling in the center of each dough circle. Fold over and seal the edges with a fork.
Brush each empanada with beaten egg for a golden finish.
Bake at 400°F (200°C) for 20 to 25 minutes or until golden brown.
