Ingredients
  

  • 2 cups pitted sweet cherries (fresh or frozen)
  • ½ cup granulated sugar
  • ½ cup water or cherry juice
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • ¼ teaspoon cinnamon (optional)
  • ¼ cup brandy or kirsch (cherry liqueur)

Instructions
 

  • In a saucepan, combine cherries, sugar, water, lemon juice, and cinnamon.
  • Dissolve cornstarch in a little cold water and add to the saucepan.
  • Cook over medium heat, stirring, until the sauce thickens and becomes glossy.
  • Remove from heat and carefully add brandy or kirsch.
  • Return to low heat and ignite with a long match to flambé (optional but traditional).
  • Once flames subside, spoon the warm cherries over vanilla ice cream and serve immediately.

  • Fresh cherries provide the best flavour when in season.
  • Frozen cherries work well and save preparation time.
  • Flambé is optional but adds authentic flair.
  • Use caution when igniting alcohol.
