- 1 ½ lbs beef chuck, cubed
- 2 tbsp vegetable oil
- 2 large onions, chopped
- 3 garlic cloves, minced
- 2 tbsp sweet paprika
- 1 tsp caraway seeds
- 2 tbsp tomato paste
- 4 cups beef broth
- 2 medium potatoes, diced
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Heat oil in a large pot. Brown beef cubes on all sides. Remove and set aside.
Add onions and cook until golden. Stir in garlic, paprika, and caraway seeds.
Mix in tomato paste, cooking for 2 minutes.
Return beef to the pot, add broth, and bring to a boil.
Reduce heat and simmer for 45 minutes.
Add potatoes, carrots, and bell pepper. Cook until vegetables and beef are tender.
Season with salt and pepper. Garnish with fresh parsley before serving.
