Ingredients
  

  • 3 cups cooked rice (preferably cooled)
  • 2 tablespoons oil
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 1 carrot (chopped)
  • ½ cup green peas
  • 1 bell pepper (chopped)
  • 2 spring onions (chopped)
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon vinegar (optional)

Instructions
 

  • Heat oil in a large pan or wok.
  • Add chopped onion and sauté for 2–3 minutes.
  • Add garlic and cook briefly.
  • Add carrot and peas.
  • Cook for 3–4 minutes.
  • Add bell pepper and cook lightly.
  • Stir gently to mix.
  • Add soy sauce.
  • Add salt and pepper.
  • Add vinegar if desired.
  • Mix well and serve hot.
