For the Chutney
- 1 cup fresh grated coconut
- ¼ cup roasted gram dal (putnalu/dalia)
- 2–3 green chilies
- ½-inch piece fresh ginger
- ½ teaspoon salt, or to taste
- ½ cup water, or as needed
- 1 teaspoon lemon juice, optional
For Tempering
- 1 teaspoon oil
- ½ teaspoon mustard seeds
- ½ teaspoon urad dal
- 1 dried red chili, broken into pieces
- 8–10 fresh curry leaves
- A pinch of asafoetida (hing)
Blend the Chutney
Add grated coconut, roasted gram dal, green chilies, ginger, salt, and about ¼ cup water to a blender.Blend until smooth and creamy. Add additional water little by little until the chutney reaches your preferred consistency.For a slightly tangy flavor, add lemon juice after blending and mix well.
Prepare the Tempering
Heat oil in a small pan over medium heat. Add mustard seeds and allow them to crackle.Add urad dal and fry until lightly golden. Add the broken dried red chili, curry leaves, and a pinch of asafoetida.Cook for a few seconds until the curry leaves become aromatic.
Finish the Chutney
Pour the hot tempering over the prepared coconut chutney. Mix gently or leave the tempering floating on top for an attractive presentation.Taste and adjust salt, water, or lemon juice if necessary.Serve immediately with hot idli, crispy dosa, medu vada, pongal, uttapam, or your favorite South Indian breakfast.
