Instructions
 

  • In a bowl, whisk together coconut milk, coconut cream, lime juice, sweetener, vanilla, and salt until smooth.
  • Taste and adjust sweetness or lime juice if needed.
  • Add lime zest and mix well.
  • Pour mixture into popsicle molds.
  • Sprinkle toasted coconut flakes or add lime slices if desired.
  • Insert popsicle sticks.
  • Freeze for at least 6 hours or overnight until firm.
  • To remove, run warm water over molds for a few seconds.
  • Serve immediately for best creamy texture.
