Ingredients
  

  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil or melted butter
  • 3 garlic cloves, minced
  • Juice and zest of 1 lemon
  • 2 tbsp fresh chives, finely chopped
  • Salt and black pepper to taste
  • Lemon slices, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Pat cod fillets dry with paper towels. Season with salt and pepper.
  • Place cod in a lightly greased baking dish.
  • In a small bowl, mix olive oil, garlic, lemon juice, and zest. Pour over the cod.
  • Bake for 12–15 minutes, until cod flakes easily with a fork.
  • Sprinkle with fresh chives and garnish with lemon slices before serving.

Notes

  • Use fresh cod for the best flavour and texture.
  • Adjust lemon juice to taste for a milder or stronger citrus flavour.
  • Add a pinch of red pepper flakes for gentle heat.
  • Butter adds richness, while olive oil keeps it lighter.
  • Serve immediately for the freshest taste.
