- 2 cups green cabbage or kale (finely chopped)

- ½ cup whole milk or cream
- 3–4 green onions (scallions), sliced

Place the peeled potatoes in a pot of salted water. Bring to a boil and cook until fork-tender (about 15–20 minutes).
In a skillet, melt 2 tablespoons of butter and sauté the cabbage or kale until soft, about 5 minutes.
Drain the cooked potatoes and mash them until smooth.
Stir in warm milk and the remaining butter while mashing to create a creamy texture.
