Ingredients
  

  • 2 tablespoons sesame oil or olive oil
  • 1 tablespoon fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 lb (450 g) chicken breast or thighs
  • 6 cups chicken broth
  • 1 teaspoon soy sauce or salt to taste
  • ½ teaspoon black pepper
  • 1 cup egg noodles or rice noodles
  • 2 spring onions, sliced
  • Fresh cilantro or parsley for garnish

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Add onion, ginger, and garlic; sauté until fragrant.
  • Add carrots and celery, cooking for 3–4 minutes.
  • Place chicken into the pot and pour in broth.
  • Season with soy sauce, salt, and pepper.
  • Simmer for 20 minutes until chicken is cooked.
  • Remove chicken, shred it, and return to the pot.
  • Add noodles and cook until tender.
  • Serve hot.
