For the Soup
- 2 lb (900 g) ahuyama or pumpkin, peeled, seeded, and cubed
- 2 medium potatoes, peeled and diced
- 1 large carrot, peeled and sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil or butter
- 6 cups vegetable or chicken broth
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- 1 bay leaf
- ½ teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped

Prepare the Ahuyama
Wash the squash thoroughly.Cut it into manageable pieces and carefully remove the seeds and fibrous center.Peel the squash and cut it into approximately 1-inch cubes.
Prepare the Vegetables
Peel and dice the potatoes.Peel and slice the carrot.Chop the onion and mince the garlic.Keeping the pieces relatively uniform helps them cook evenly.
Sauté the Onion
Heat olive oil or butter in a large soup pot over medium heat.Add the chopped onion.Cook for approximately 4–5 minutes, stirring occasionally, until softened.
Add Garlic
Add the minced garlic.Cook for approximately 30–60 seconds until fragrant.Avoid browning the garlic too much.
Add the Spices
Stir in the cumin, oregano, black pepper, and optional paprika.Cook for about 30 seconds.This helps release the spices' aroma.
Add the Broth
Pour in the vegetable or chicken broth.Add the bay leaf.The liquid should cover most of the vegetables.
Cook the Vegetables
Cover partially and simmer for approximately 25–35 minutes.Cook until the ahuyama, potatoes, and carrots are completely tender.
Blend the Soup
For a smooth soup, use an immersion blender directly in the pot.Blend until creamy and uniform.Alternatively, transfer the soup carefully to a countertop blender in batches
Add Milk or Cream
For a richer soup, stir in milk or cream.Heat gently for another 2–3 minutes.Do not allow the soup to boil vigorously after adding dairy.
Serve
Ladle the hot soup into bowls.Garnish with fresh cilantro, pumpkin seeds, freshly ground black pepper, or a small drizzle of cream.Serve immediately with warm bread or Colombian arepas.
