Ingredients
  

  • 1 lb (450g) Italian sausage (mild or spicy)
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4–5 medium potatoes, thinly sliced
  • 1 tsp crushed red pepper (optional)
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • 2 cups chopped kale (or spinach)
  • 1 cup heavy cream
  • 1 tablespoon olive oil (if needed)

Instructions
 

  • In a large pot, cook bacon until crisp. Remove bacon and set aside.
  • In the same pot, cook Italian sausage until browned. Drain excess fat.
  • Add diced onion and cook until soft, then stir in garlic and sauté 1 minute.
  • Pour in chicken broth and bring to a boil.
  • Add potato slices, reduce heat, and simmer 15–20 minutes until tender.
  • Stir in kale and simmer 3–4 minutes.
  • Add heavy cream, season with salt, pepper, and red pepper flakes.
  • Return bacon to the pot, stir gently, and serve hot.

Notes

  • Substitute spinach for kale if preferred.
  • Coconut milk can replace heavy cream for a dairy-free version.
  • Use mild sausage if serving children.
  • Yukon gold potatoes hold shape best.
  • Soup thickens as it sits—add broth when reheating.
