Ingredients
  

  • 3 cups cooked shredded chicken
  • 2 cans (4 oz each) diced green chiles, drained
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded Cheddar cheese
  • 6 large eggs
  • 1 cup whole milk
  • ½ cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons chopped cilantro
  • Cooking spray or butter for greasing

Instructions
 

  • Lightly grease the inside of your slow cooker.
  • Spread half of the shredded chicken evenly across the bottom.
  • Top with half of the diced green chiles.
  • Sprinkle half of both cheeses over the chicken.
  • Repeat the layers using the remaining chicken, chiles, and cheese.
  • In a bowl, whisk together eggs, milk, sour cream, flour, garlic powder, onion powder, cumin, paprika, salt, and pepper.
  • Pour the egg mixture evenly over the layered ingredients.
  • Cover the slow cooker with the lid.
  • Cook on LOW for 4 hours or HIGH for 2½ hours until the center is fully set.
  • Turn off the heat and allow the casserole to rest for 10 minutes.
  • Garnish with fresh cilantro and your favorite toppings before serving.
