- 1 medium head of cabbage, finely chopped (about 8 cups)
- 1 large carrot, grated
- 1/4 cup onion, finely minced
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 1/4 cup whole milk
- 2 tbsp white vinegar
- 3 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Prepare the vegetables: Finely chop the cabbage, grate the carrot, and mince the onion. Place them in a large mixing bowl.
Make the dressing: In a separate bowl, whisk together mayonnaise, buttermilk, whole milk, white vinegar, sugar, salt, black pepper, and lemon juice until smooth.
Combine and mix: Pour the dressing over the chopped vegetables. Stir until the vegetables are evenly coated.
Chill: Cover the bowl and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld.
Serve: Give the coleslaw a final stir before serving. Enjoy as a side dish with fried chicken, barbecue, or sandwiches.
