Instructions
 

  • Preheat oven to 350°F (175°C).Line baking sheets with parchment paper.Cream butter, brown sugar, and granulated sugar until fluffy.
  • Add eggs and vanilla extract.Mix until smooth.
  • In a separate bowl, whisk flour, baking soda, cinnamon, and salt.Gradually add dry ingredients to the wet mixture.Fold in rolled oats until fully incorporated.
  • Scoop tablespoon-sized portions onto prepared baking sheets.Leave space between cookies.
  • Bake for 10–12 minutes until edges are lightly golden.Allow cookies to cool completely.
  • Beat butter until creamy.Add powdered sugar gradually.
  • Mix in marshmallow creme, vanilla, and heavy cream.Beat until light and fluffy.
  • Match cookies into pairs of similar size.Spread or pipe filling onto the flat side of one cookie.Top with a second cookie.Gently press together.
  • Allow assembled pies to rest for 15 minutes.Serve and enjoy.
