For the Fish Fillets:
- 4 white fish fillets (Alaskan pollock, cod, or tilapia)
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs (panko preferred)
- ½ teaspoon salt
- ½ teaspoon black pepper
- Oil for frying
For the Tartar Sauce:
- ½ cup mayonnaise
- 2 tablespoons finely chopped pickles or relish
- 1 teaspoon lemon juice
- 1 teaspoon finely chopped onion
- Pinch of salt
For Assembly:
- 4 soft hamburger buns
- 2 slices American cheese (cut in half)
Pat fish fillets dry. Season lightly with salt and pepper.
Coat each fillet in flour, dip into beaten eggs, then coat with breadcrumbs. Press gently for an even crust.
