For the Cookies:
- 1½ cups all-purpose flour
- ½ cup graham cracker crumbs
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ¼ cup milk
For the Marshmallow Filling:
- 1 cup marshmallow fluff
- ½ cup powdered sugar
- 2 tablespoons unsalted butter, softened
- ½ teaspoon vanilla extract
For the Chocolate Coating:
- 1½ cups semi-sweet chocolate chips
- 2 tablespoons coconut oil or shortening
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a bowl, whisk flour, graham crumbs, baking soda, and salt.
In another bowl, cream butter and sugars until light and fluffy.
Beat in egg, vanilla, and milk. Gradually mix in dry ingredients.
Scoop dough into rounds and bake for 10–12 minutes until set. Cool completely.
Mix marshmallow fluff, powdered sugar, butter, and vanilla until smooth.
Spread filling onto half the cookies and top with remaining cookies to form sandwiches.
Chill sandwiches for 30 minutes.
Melt chocolate with coconut oil, then dip each sandwich to coat evenly.
Let set on parchment paper until chocolate hardens.
