Ingredients
  

For the Cookies:

  • 1½ cups all-purpose flour
  • ½ cup graham cracker crumbs
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup milk

For the Marshmallow Filling:

  • 1 cup marshmallow fluff
  • ½ cup powdered sugar
  • 2 tablespoons unsalted butter, softened
  • ½ teaspoon vanilla extract

For the Chocolate Coating:

  • 1½ cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil or shortening

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a bowl, whisk flour, graham crumbs, baking soda, and salt.
  • In another bowl, cream butter and sugars until light and fluffy.
  • Beat in egg, vanilla, and milk. Gradually mix in dry ingredients.
  • Scoop dough into rounds and bake for 10–12 minutes until set. Cool completely.
  • Mix marshmallow fluff, powdered sugar, butter, and vanilla until smooth.
  • Spread filling onto half the cookies and top with remaining cookies to form sandwiches.
  • Chill sandwiches for 30 minutes.
  • Melt chocolate with coconut oil, then dip each sandwich to coat evenly.
  • Let set on parchment paper until chocolate hardens.
