  • 1 cup fresh blueberries
  • 1 cup mandarin orange segments, drained

For the Poppyseed Dressing

  • ⅓ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon poppy seeds
  • ¼ teaspoon salt

Instructions
 

  • Season the chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook for 6–7 minutes per side until fully cooked. Let rest, then slice thinly.
  • Whisk together Greek yogurt, mayonnaise, honey, apple cider vinegar, lemon juice, poppy seeds, and salt until smooth.
  • In a large bowl, combine mixed greens, strawberries, blueberries, mandarin oranges, pecans, and red onion.
  • Arrange sliced chicken over the top of the salad.
  • Drizzle with poppyseed dressing just before serving and toss gently.
