Preheat your oven to 350°F (175°C). Lightly grease a 9 × 5-inch loaf pan and line it with parchment paper, leaving a little overhang on the sides for easy removal.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves. Make sure the spices are evenly distributed throughout the flour mixture.
In a large bowl, whisk the eggs, granulated sugar, and brown sugar until well combined. Add the pumpkin puree, vegetable oil, water, and vanilla extract. Whisk until the mixture looks smooth and uniform.
Gradually add the dry ingredients to the wet mixture. Fold gently with a spatula until no dry flour remains. Avoid overmixing, as excessive stirring can make the loaf dense.
Pour the batter into the prepared pan and smooth the surface with a spatula. Tap the pan gently on the counter to release any large air pockets.
Sprinkle the pumpkin seeds evenly over the batter. Gently press them into the surface so they adhere during baking. If desired, mix the seeds with a little sugar and cinnamon before sprinkling.
Bake for approximately 55–70 minutes. Begin checking around 55 minutes because ovens and pans vary. Insert a toothpick into the center; it should come out clean or with a few moist crumbs, not wet batter. If the top browns too quickly, loosely cover it with foil during the final part of baking.
Let the bread rest in the pan for 10–15 minutes. Carefully lift it out and transfer it to a wire rack. Allow it to cool completely before slicing so the center can finish setting and the slices hold together neatly.
Use a sharp serrated knife to cut the loaf into thick slices. Serve at room temperature with coffee, tea, or your favorite hot drink. For an extra treat, lightly toast a slice and spread it with a little butter.
