Ingredients
  

For the Casserole

  • 4 cups fresh corn kernels (about 5–6 ears of corn)
  • 3 large ripe tomatoes, diced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup sour cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons chopped fresh parsley

For the Topping

  • ¾ cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped parsley

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  • Heat olive oil and butter in a skillet over medium heat. Sauté the chopped onion for about 4 minutes until softened. Add the garlic and cook for another minute until fragrant.
  • Stir in the fresh corn kernels and cook for 3–4 minutes. Fold in the diced tomatoes, oregano, thyme, salt, and pepper. Cook briefly, then remove from the heat.
  • Transfer the vegetable mixture to a large bowl. Add the sour cream, mozzarella cheese, half of the Parmesan cheese, and chopped parsley. Mix until well combined.
  • Spread the mixture evenly into the prepared casserole dish.
  • Combine the panko breadcrumbs, melted butter, remaining Parmesan cheese, and parsley. Sprinkle evenly over the casserole.
  • Bake for 30–35 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.
  • Allow the casserole to rest for 5–10 minutes before serving. Garnish with additional parsley if desired.
