For the Dressing:
- 4 cups crumbled cornbread (day-old preferred)
- 2 cups chicken broth
- 1 cup chopped onion
- 1 cup chopped celery
- 2 eggs, beaten
- ½ cup butter, melted
- 1 teaspoon sage
- 1 teaspoon thyme
- Salt and black pepper to taste
For the Gravy:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth (or turkey drippings)
- Salt and pepper to taste
Preheat oven to 180°C (350°F).In a large bowl, combine crumbled cornbread, onion, and celery.
Add melted butter, eggs, and broth. Mix well.Stir in sage, thyme, salt, and pepper.
Transfer mixture to a greased baking dish.Bake for 35–40 minutes until golden brown on top.
Melt butter in a saucepan over medium heat.Add flour and whisk to form a roux.
Cook for 1–2 minutes until lightly golden.Gradually add broth while whisking.
Simmer until thickened.Season with salt and pepper.
Spoon warm dressing onto plates and drizzle generously with gravy.
