- 3 medium potatoes, peeled and diced
- 1 small onion, finely chopped
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped (optional)
- 2 eggs (optional, for serving)
Heat butter and olive oil in a large skillet over medium heat.
Add diced potatoes and cook until golden brown, stirring occasionally (about 10 minutes).
Stir in chopped onions and cook for another 3-4 minutes until softened.
Add diced corned beef, garlic powder, paprika, salt, and pepper.
Cook for 7-8 minutes, stirring occasionally, until everything is crispy and well combined.
Garnish with fresh parsley if desired and serve with eggs on top or on the side.
