Ingredients
  

  • 2 cups cooked corned beef, diced
  • 3 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)
  • 2 eggs (optional, for serving)

Instructions
 

  • Heat butter and olive oil in a large skillet over medium heat.
  • Add diced potatoes and cook until golden brown, stirring occasionally (about 10 minutes).
  • Stir in chopped onions and cook for another 3-4 minutes until softened.
  • Add diced corned beef, garlic powder, paprika, salt, and pepper.
  • Cook for 7-8 minutes, stirring occasionally, until everything is crispy and well combined.
  • Garnish with fresh parsley if desired and serve with eggs on top or on the side.

Notes

  • Use leftover corned beef for the best flavor.
  • For extra crispiness, press the hash down in the skillet and let it cook undisturbed for a few minutes before flipping.
  • Adjust seasoning to taste, depending on the saltiness of your corned beef.
