cups
diced potatoes (russet or Yukon Gold)
1/2
pound
breakfast sausage or bacon, cooked and crumbled

small onion, diced
1
bell pepper, diced (any color)

large eggs

cup
shredded cheese (cheddar, Monterey Jack, or your favorite)

tbsp
olive oil or butter
Salt and pepper, to taste
Fresh herbs (optional, for garnish)
Instructions
Heat olive oil or butter in a large skillet over medium heat.
Add diced potatoes and cook until golden and crispy, about 10-12 minutes.
Stir in the onion and bell pepper; cook for another 5 minutes until softened.
Add the cooked sausage or bacon and mix well.
Create four small wells in the skillet and crack an egg into each well.
Cover the skillet and cook until the eggs are set to your desired doneness, about 5-7 minutes.
Sprinkle shredded cheese on top and allow it to melt.
Season with salt and pepper to taste and garnish with fresh herbs if desired.
Serve hot and enjoy your hearty Country Breakfast Skillet!
Notes
Feel free to customize with additional vegetables like mushrooms or spinach. You can also use leftover meats like ham or roast beef.
