Ingredients
  

For the Chicken

  • 1½ lb boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper, optional
  • 1 tablespoon fresh lemon juice

For the Cowboy Butter

  • ½ cup unsalted butter, melted
  • 4 garlic cloves, finely minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh chives
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon black pepper
  • Salt to taste

Instructions
 

  • Place the chicken pieces in a large bowl. Add olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, chili powder, cayenne pepper, and lemon juice.
  • Toss thoroughly until every piece is evenly coated. Cover and refrigerate for about 30 minutes.
  • If using wooden skewers, soak them in water for at least 30 minutes to help prevent them from burning during grilling.
  • In a small bowl, combine melted butter, minced garlic, Dijon mustard, lemon juice, lemon zest, parsley, chives, smoked paprika, red pepper flakes, cayenne pepper, and black pepper.
  • Preheat an outdoor grill or grill pan to medium-high heat. Lightly oil the cooking surface to reduce sticking.
  • Place the skewers on the hot grill. Cook for approximately 4–5 minutes per side, turning regularly, until the chicken is browned, lightly charred, and cooked through.
  • Remove the skewers from the grill and brush generously with fresh cowboy butter. Allow them to rest for 3–5 minutes before serving.
  • Garnish with chopped parsley, extra lemon zest, or a squeeze of fresh lemon.

Notes

  • Chicken thighs: Thigh meat is especially juicy and forgiving, while chicken breast provides a leaner option.
  • Skewer size: Cut the chicken into similarly sized pieces so everything cooks at approximately the same rate.
  • Wooden skewers: Soaking them prevents them from catching fire on the grill.
  • Butter: Unsalted butter gives you better control over the final seasoning.
  • Heat: Adjust cayenne and red pepper flakes according to your preferred spice level.
