Ingredients
  

  • 1 cup unsalted butter, melted and slightly cooled
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups rolled oats
  • 1 cup sweetened shredded coconut
  • 1 cup semisweet chocolate chips
  • ¾ cup chopped pecans (or walnuts)

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper or grease lightly.
  • In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  • Add eggs and vanilla extract; mix until combined.
  • In another bowl, whisk flour, baking soda, and salt. Gradually stir into the wet ingredients.
  • Fold in oats, coconut, chocolate chips, and pecans.
  • Spread the batter evenly into the prepared pan.
  • Bake for 25–30 minutes or until golden brown and set in the center.
  • Let cool completely before slicing into bars.

Notes

  • Use old-fashioned oats for a chewy texture.
  • Substitute chocolate chips with chunks for extra gooeyness.
  • Add a sprinkle of flaky sea salt on top before baking for a sweet-salty twist.
  • Let bars cool completely before cutting to prevent crumbling.
  • Store in an airtight container for up to 5 days.
