Ingredients
  

  • 3 large eggs
  • 1/2 cup cooked crab meat (fresh or canned)
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped bell peppers (optional)
  • 1 tbsp butter or cooking oil
  • 1 tbsp chopped fresh parsley (optional, for garnish)
  • Salt and pepper to taste
  • 1 tsp soy sauce (optional, for added flavor)

Instructions
 

  • Prepare the ingredients:
    Ensure the crab meat is clean and free of shells. Chop the onions and bell peppers finely.
  • Whisk the eggs:
    In a bowl, whisk together the eggs, salt, pepper, and soy sauce (if using) until well combined.
  • Cook the filling:
    Heat a skillet over medium heat and add the butter or oil. Sauté the onions and bell peppers until softened, about 3 minutes. Add the crab meat and cook for another 2 minutes. Remove the filling from the skillet and set aside.
  • Cook the omelette:
    Pour the whisked eggs into the skillet, tilting to coat the surface evenly. Cook for about 2 minutes or until the edges begin to set.
  • Add the filling:
    Spread the crab mixture over one side of the omelette. Fold the other side over to cover the filling.
  • Finish cooking:
    Cook for another 1-2 minutes until the omelette is fully set and heated through.
  • Serve:
    Transfer the omelette to a plate, garnish with parsley, and serve immediately.

Notes

  • Fresh crab meat is ideal for this recipe, but canned or imitation crab can be used as a substitute.
