- 1/4 cup finely chopped onions
- 1/4 cup finely chopped bell peppers (optional)
- 1 tbsp butter or cooking oil
- 1 tbsp chopped fresh parsley (optional, for garnish)
- Salt and pepper to taste
- 1 tsp soy sauce (optional, for added flavor)
Prepare the ingredients: Ensure the crab meat is clean and free of shells. Chop the onions and bell peppers finely. Whisk the eggs: In a bowl, whisk together the eggs, salt, pepper, and soy sauce (if using) until well combined. Cook the filling: Heat a skillet over medium heat and add the butter or oil. Sauté the onions and bell peppers until softened, about 3 minutes. Add the crab meat and cook for another 2 minutes. Remove the filling from the skillet and set aside. Cook the omelette: Pour the whisked eggs into the skillet, tilting to coat the surface evenly. Cook for about 2 minutes or until the edges begin to set. Add the filling: Spread the crab mixture over one side of the omelette. Fold the other side over to cover the filling.
