- 2 cups fresh or frozen green peas
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk (whole milk or half-and-half)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon sugar (optional, to enhance sweetness)
- 1 tablespoon heavy cream or butter (optional for richness)
Cook the peas: Boil peas in salted water for 2–3 minutes until tender. Drain and set aside.
Make the cream base: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a smooth roux.
Add milk: Slowly whisk in milk until the mixture thickens into a creamy sauce, about 3–5 minutes.
Combine: Stir in peas, salt, pepper, and sugar. Simmer for another 2 minutes.
Finish: Add a splash of cream or extra butter for a silkier texture. Serve warm.
- You can use either fresh or frozen peas; both yield great results.
- For a lighter version, substitute milk with unsweetened almond or oat milk.
- Add sautéed onions or garlic for more depth of flavor.
- To thicken the sauce further, cook it for an extra minute or two.
- Fresh herbs like parsley or dill add a burst of color and freshness.
