Ingredients
  

  • 2 cups fresh or frozen green peas
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (whole milk or half-and-half)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sugar (optional, to enhance sweetness)
  • 1 tablespoon heavy cream or butter (optional for richness)

Instructions
 

  • Cook the peas: Boil peas in salted water for 2–3 minutes until tender. Drain and set aside.
  • Make the cream base: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a smooth roux.
  • Add milk: Slowly whisk in milk until the mixture thickens into a creamy sauce, about 3–5 minutes.
  • Combine: Stir in peas, salt, pepper, and sugar. Simmer for another 2 minutes.
  • Finish: Add a splash of cream or extra butter for a silkier texture. Serve warm.

Notes

  • You can use either fresh or frozen peas; both yield great results.
  • For a lighter version, substitute milk with unsweetened almond or oat milk.
  • Add sautéed onions or garlic for more depth of flavor.
  • To thicken the sauce further, cook it for an extra minute or two.
