- 4 medium potatoes, peeled and diced
- 3 cup chicken or vegetable broth
- 1 cup milk (whole or 2% preferred)
- 2 tbsp butter
- Optional toppings: shredded cheese, sour cream, chopped chives, bacon bits
Cook the potatoes: In a large pot, add diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender (about 15 minutes).
Mash slightly: Use a potato masher to lightly mash some of the potatoes in the pot, leaving a few chunks for texture.
Add milk and butter: Stir in the milk and butter. Heat for another 5 minutes over low heat, stirring occasionally.
Serve: Ladle into bowls and top with optional garnishes if desired.
