Ingredients
  

  • 4 medium potatoes, peeled and diced
  • 3 cup chicken or vegetable broth
  • 1 cup milk (whole or 2% preferred)
  • 2 tbsp butter
  • Optional toppings: shredded cheese, sour cream, chopped chives, bacon bits

Instructions
 

  • Cook the potatoes: In a large pot, add diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender (about 15 minutes).
  • Mash slightly: Use a potato masher to lightly mash some of the potatoes in the pot, leaving a few chunks for texture.
  • Add milk and butter: Stir in the milk and butter. Heat for another 5 minutes over low heat, stirring occasionally.
  • Serve: Ladle into bowls and top with optional garnishes if desired.

Notes

  • Use Yukon Gold or Russet potatoes for the creamiest texture.
  • For thicker soup, reduce the amount of broth slightly or mash more potatoes.
  • Add salt and pepper to taste depending on your broth’s seasoning.
