  • 2 tablespoons butter or olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 bunch asparagus, trimmed and chopped
  • 4 cups vegetable broth or chicken broth
  • 1 cup milk, cream, or half-and-half
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme or 1 teaspoon fresh thyme
  • 1 tablespoon lemon juice
  • Extra asparagus tips, for garnish if desired

Instructions
 

  • Heat the butter or olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until soft and translucent.
  • Stir in the garlic and cook for about 1 minute until fragrant.
  • Add the diced potatoes and chopped asparagus to the pot.
  • Bring the soup to a boil, then reduce the heat and simmer for 20 to 25 minutes, or until the potatoes are very tender and the asparagus is soft.
  • Use an immersion blender to blend the soup until smooth, or blend in batches using a countertop blender.
  • Stir in the milk, cream, or half-and-half and heat gently without boiling.
  • Serve hot, garnished with parsley, chives, or reserved asparagus tips if desired.
