Ingredients
  

  • 4 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 2 cups vegetable or chicken broth
  • 3 cups fresh broccoli florets, chopped
  • 1 cup carrots, grated (optional)
  • 2 cups sharp cheddar cheese, freshly grated
  • ½ cup heavy cream

Instructions

  • Gradually add milk while whisking to prevent lumps.

  • Slowly add shredded cheddar, stirring until melted and smooth.
  • Season with salt and pepper.
  • Blend partially for a smoother texture (optional).
