Ingredients
  

  • 4 chicken breasts or thighs
  • 2 cups sliced mushrooms
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp flour
  • 1 ½ cups chicken broth
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions
 

  • Season chicken with salt, pepper, and thyme.
  • Heat olive oil in a skillet and sear chicken until golden. Remove and set aside.
  • Add butter to the same skillet and sauté onions until soft.
  • Add garlic and mushrooms; cook until browned.
  • Slowly pour in chicken broth, stirring until thickened.
  • Add heavy cream and return chicken to the skillet.
  • Simmer for 10–15 minutes until chicken is cooked through.
  • Garnish with parsley and serve.

Notes

  • Chicken thighs stay juicier than breasts.
  • Fresh mushrooms give stronger flavour.
  • Use low-sodium broth to control saltiness.
  • Add spinach for extra nutrients.
  • Sauce thickens more as it cools.
