- 2 lbs (900g) beef chuck or stew meat
- 1 small onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- ½ tsp black pepper
- 1 tsp paprika
- 1 tbsp cornstarch (optional, for thickening)
- 1 cup sour cream (added at end)
- 12 oz egg noodles (for serving)
