- 1 cup heavy cream
- ½–¾ cup crumbled Gorgonzola cheese
- 3 cups fresh spinach leaves
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
- ¼ teaspoon nutmeg (optional)
- Fresh parsley or basil for garnish
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
Heat olive oil in a large skillet over medium heat. Add chopped shallots and garlic, cooking for 2–3 minutes until fragrant and soft.
Pour in the heavy cream and stir gently. Allow it to simmer for 2–3 minutes until slightly thickened.
