- 1 cup orzo pasta
- 250 gram mushrooms (button, cremini, or shiitake), sliced
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cup vegetable or chicken broth
- ½ cup grated Parmesan cheese
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp dried thyme (or fresh thyme leaves)
- ½ cup heavy cream (optional, for extra creaminess)
- Fresh parsley for garnish
Sauté the Mushrooms: In a large pan, heat olive oil and butter over medium heat. Add mushrooms and cook for 5 minutes until browned.
Add Aromatics: Stir in the garlic and onions, cooking for another 2 minutes until fragrant.
Cook the Orzo: Add the orzo and toast for 1-2 minutes, stirring frequently.
Add Broth & Simmer: Pour in the broth, salt, pepper, and thyme. Stir well and let simmer on low heat for 10-12 minutes, stirring occasionally.
Finish with Cheese & Cream: Once the orzo is tender, remove from heat. Stir in Parmesan cheese and optional heavy cream for extra creaminess.
Serve & Garnish: Let the dish sit for 5 minutes, then garnish with fresh parsley and serve warm.
