Ingredients
  

  • 1 cup orzo pasta
  • 250 gram mushrooms (button, cremini, or shiitake), sliced
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cup vegetable or chicken broth
  • ½ cup grated Parmesan cheese
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried thyme (or fresh thyme leaves)
  • ½ cup heavy cream (optional, for extra creaminess)
  • Fresh parsley for garnish

Instructions
 

  • Sauté the Mushrooms: In a large pan, heat olive oil and butter over medium heat. Add mushrooms and cook for 5 minutes until browned.
  • Add Aromatics: Stir in the garlic and onions, cooking for another 2 minutes until fragrant.
  • Cook the Orzo: Add the orzo and toast for 1-2 minutes, stirring frequently.
  • Add Broth & Simmer: Pour in the broth, salt, pepper, and thyme. Stir well and let simmer on low heat for 10-12 minutes, stirring occasionally.
  • Finish with Cheese & Cream: Once the orzo is tender, remove from heat. Stir in Parmesan cheese and optional heavy cream for extra creaminess.
  • Serve & Garnish: Let the dish sit for 5 minutes, then garnish with fresh parsley and serve warm.

Notes

  • For a richer taste, use a mix of mushrooms like cremini and shiitake.
  • Add spinach or peas for extra nutrition.
  • Substitute cream with Greek yogurt for a lighter version.
