Ingredients
  

  • 2 tablespoons vegetable oil
  • 4 boneless chicken thighs or breasts
  • 1 cup long-grain rice
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • ½ cup peas or mixed vegetables
  • 2 tablespoons chopped cilantro or parsley

Instructions
 

  • Heat oil in a large pot over medium heat. Season the chicken with salt and pepper. Add the chicken and cook for about 4–5 minutes per side until lightly golden. Remove and set aside.
  • In the same pot, add onion and cook for 2–3 minutes until soft. Stir in garlic and ginger and cook for another minute until fragrant.
  • Add the rice and stir to coat with the aromatics. Pour in coconut milk and chicken broth, then mix in paprika and turmeric.
  • Place the chicken back into the pot. Bring to a gentle simmer, cover, and cook for about 20 minutes until the rice is tender.
  • Stir in peas or mixed vegetables during the last 5 minutes of cooking.
  • Sprinkle with cilantro and a squeeze of lime juice before serving.
